Friday’s Fix- Furniture Finds

This post should be called “Ode to Dot & Bo.” From Industrial Chic and Mid-Century Classics to Bohemian Sanctuary, Dot & Bo has it all. I’m currently obsessed with countless items on their site so I thought, why not do an entire ‘Friday’s Fix’ with some of my current favorites?!

Superfood Spinach Shake

Did you know the patron saint of Ireland, St. Patrick wasn’t even Irish?

In light of St. Patrick and the Irish’s day of celebration (and for some people, lots of drinking), I thought it seemed fitting to feature an amazing Spinach Superfood Shake. Hangover cure? Sure! After workout power smoothie? That’ll work too. Either way, this recipe is ‘super’ easy.

Ingredients:

-1 large banana – previously peeled, sliced and frozen
-1 heaping handful of spinach (approx. 1.5 cups)
-1/2 an apple (red or green, peeled or not — up to you)
-1/2 cup unsweetened almond milk (my original recipe called for coconut water but someone took the last one to work *ahem* I’m not naming names)
-1 teaspoon ground flaxseed
-1/2 teaspoon ground chia seeds
-1 scoop of protein powder (optional) -I use Vega One
-1 handful of sliced strawberries (optional)

Directions:

Rinse spinach, peel and dice apple and slice strawberries. Blend all of your ingredients together including your frozen banana. If you feel your shake is too thick, add more milk. I added a few cubes of ice because my banana wasn’t as frozen as I’d like. Plus, I like my shakes really cold.

Enjoy!

Baby Eats- Easy Baked Apples

Per doctor’s orders, she wants us to start trying different finger foods with our little one. Baked apples seemed like a delicious first finger food to try out. After searching, I only found baked apple recipes that included lots of brown sugar and oats. So I just threw together what I thought would be healthy and tasty.

Ingredients:
-Apples (I used 2)
-1 teaspoon Cinnamon
-1/2 teaspoon Nutmeg
-2 tablespoons Coconut oil (half melted, the other half not)

You can vary the amount of ingredients to your personal preference. If you don’t like coconut oil or have an allergy, I’m sure you can use butter. Feel free to substitute other spices that you like. For this meal, I only had 2 apples which was perfect for my little guy and I to share.

Directions:
Wash, peel and slice apples. I recommend slicing and not dicing the apples if you are making for your little one. Melt half of your coconut oil and pour over apple slices in a mixing bowl. Sprinkle cinnamon and nutmeg and mix. Place apple slices into glass baking dish and put remaining coconut oil in small clumps sporadically on top.
Bake on 400 for 15 minutes. Check apples and stir around in the dish, cover with foil and bake another 5 minutes. Cool & serve.

DIY Hand Scrub- With Ingredients From Your Kitchen

Between Colorado’s cold Winter and my constant hand washing because of the baby, my hands are dry and rough. I decided regular over-the-counter lotions just weren’t cutting it. I perused through my pantry and threw together a few ingredients and viola, I have a hand scrub. After just one use, I am hooked (and so is my husband but shhhh don’t tell anyone ;). Here is the super easy hand scrub recipe from common pantry ingredients.

Ingredients:
-2/3 Cups Sea Salt- I only had larger granule sea salt so I used my coffee grinder to make a little finer
-6 tablespoons coconut oil melted
-6 tablespoons olive oil
-6-10 drops of lemongrass essential oil (or any essential oil you might have on hand)

Directions:
Place salt in bowl first, then pour melted coconut oil, olive oil and essential oil over salt and mix together.

To Use:
Scoop a small amount on your hands (or body) and rub together. Rinse thoroughly with warm water.

Please note- Once coconut oil has been melted, it can return back to it’s solid form. To prevent your scrub from becoming too solidified, keep away from cooler temps. You may also use fractionated coconut oil which remains in a liquid form naturally.

I chose lemongrass for it’s antiseptic properties but I’m sure this scrub could work with a citrus scent or any other essential oil you might have on hand.

Spring Espadrilles

My good friend Rashelle has had her eye on an adorable pair of Chanel Espadrilles since they hit Neiman’s floor. After debating for hours about whether she should take the plunge, she made the purchase and they now reside in her closet (lucky! You can see them below). This Friday’s Fix is inspired by her love for this fancy footwear and I’m dedicating this post to her. Flourless Pancakes

It’s Pancake Sunday in my household and today I wanted to include my baby since he’s starting to explore foods other than just milk and purees. Here is a super easy Flour-less Pancake recipe.

Ingredients:
1 Banana
1 Egg
Fruit of your choice (optional)

-Mix or blend all ingredients together. Pour batter onto pan that has been buttered or sprayed with Pam. Flip to ensure both sides are slightly brown to ensure they are cooked thoroughly. Serve and enjoy!

P.S. You should make sure your baby has no allergies to any of the listed ingredients prior to serving.
